Yummy Flourless Chocolate Chip Cookies

This is Jessica and I have another pumpkin cookie recipe….I know pumpkin recipe overload lately but I love pretty much everything pumpkin and with Thanksgiving less than a week away I have to get all my pumpkin recipes that I want to try done!

I pinned a recipe a couple weeks ago for a flourless chocolate chip pumpkin cookie and I finally tried it! You use oats that have been blended in a food processor for your “flour”. It also contains no white sugar and butter, so that means it is healthier and I can have 8 instead of 1? Right, right?

IMG_5820The recipe calls for dark chocolate chips and milk chocolate chunks but I just had my wonderful 4 pound bag of semi sweet chocolate chips. If you know me and know how much I loveeee chocolate then you know I never measure out chocolate chips in cookie recipes, I just add as many as I think loves delicious and call it good. Of course, our dad and a brother-in-law are the type that would prefer no chocolate chips in a cookie or maybe just a few but I love as many chocolate chips as I can get into a cookie!

IMG_5821The recipe said to bake the cookies for 6-8 minutes and I ended up baking them for about 10 minutes.

IMG_5822 They turned out great and I can feel a little less guilty about eating half a dozen ;).
