The best things in life come in threes!


I love just about everything pumpkin flavor just like my sisters! As you can tell we love baking yummy pumpkin treats. So, I love making pumpkin cookies but for a while I’ve been wanting a pumpkin cookie that was soft but still chewy. I made these this morning and my two and three year old loved them so I felt they were yummy enough to share! They’re loaded with lots of yummy ingredients and I hope you enjoy them too!

Chewy Oatmeal Pumpkin Cookies

– 1-1/2 sticks margarine or butter, softened
(I use margarine for cookies because I like the way they bake but you can use whatever you like!)
– 1 cup granulated sugar
– 1 cup brown sugar, packed
– 1 cup oil (I have used vegetable and coconut and they each work great!)
– 3/4 cup pumpkin puree
– 1 egg
– 1 teaspoon vanilla
– 1 teaspoon pumpkin pie spice
– 1/2 teaspoon nutmeg
– 1/2 teaspoon cinnamon
– 1 teaspoon baking soda
– 1 teaspoon baking powder
– 1-1/2 cups oatmeal
– 1/2 cup shredded coconut
– 3 cups flour (I use 1-1/2 cups wheat flour & 1-1/2 cups white flour)
– 2 cups chocolate chips

Preheat oven to 350 degrees

Mix the softened butter or margarine together with the sugars and oil. Add the pumpkin puree, vanilla, and egg. Next add the baking powder, baking soda, shredded coconut, oatmeal, chocolate chips, and lastly add the flour.

Bake cookies for 12-15 minutes

This recipe makes approximately 3-1/2 dozen cookies
